Estrategias de valor agregado en la producción frutihortícola del Cinturón Centro de Santa Fe a través de las buenas prácticas agrícolas

Abstract

El presente trabajo analiza la cadena frutihortícola del Cinturón Centro de Santa Fe, una región de gran relevancia económica y social por su aporte a la seguridad alimentaria y la generación de empleo. El estudio parte de un diagnóstico actualizado sobre la situación productiva y comercial del sector, identificando oportunidades y amenazas del entorno, así como fortalezas y debilidades propias del eslabón productivo. Mediante la recopilación y análisis de información primaria y secundaria, y la consulta a actores clave, se evalúa el grado de implementación de las Buenas Prácticas Agrícolas (BPA) y su potencial para agregar valor y mejorar la competitividad de los productores. Los resultados evidencian la necesidad de fortalecer la formalización, la capacitación y la articulación entre los distintos actores de la cadena, así como de desarrollar estrategias de diferenciación e inserción en mercados con mayor valor agregado. Finalmente, se propone un plan de implementación por etapas que integra la transición técnica, la validación social y la consolidación comercial, con el objetivo de contribuir a la sostenibilidad y resiliencia del sector frutihortícola santafesino.

This study analyzes the fruit and vegetable value chain of the Cinturón Centro de Santa Fe, a region of significant economic and social relevance due to its contribution to food security and employment generation. It begins with an updated assessment of the sector’s productive and commercial situation, identifying environmental opportunities and threats, as well as strengths and weaknesses inherent to the production stage. Through the collection and analysis of primary and secondary data, complemented by consultations with key stakeholders, the study evaluates the degree of implementation of Good Agricultural Practices (GAP) and their potential to add value and enhance producer competitiveness. The findings underscore the need to strengthen formalization, training, and coordination among the various actors in the chain, as well as the importance of developing differentiation strategies and improving access to higher value-added markets. Finally, the study proposes a phased implementation plan that integrates technical transition, social validation, and commercial consolidation, with the aim of contributing to the sustainability and resilience of the fruit and vegetable sector in Santa Fe.
